It’s easy to make fajitas in the air fryer: Season the vegetables and steak, air-fry, and serve with toppings. It’s restaurant quality cooking at home!
Ingredients
- 1 large red pepper, quartered lengthwise, then sliced crosswise
- 1 large yellow pepper, quartered lengthwise, then sliced crosswise
- 1 large red onion, sliced 1/4 in. thick
- 2 tsp. grated lime zest plus 2 Tbsp lime juice, plus lime wedges for serving
- 1/4 tsp. ground cumin
- 1 tbsp. plus 2 tsp canola oil
- 1/2 tsp. granulated garlic, divided
- Kosher salt and pepper
- 12 oz. skirt steak (cut crosswise into 4-in. pieces) or hanger steak (halved)
- 1 tsp. ancho chile powder
- 1/4 c. cilantro, chopped, plus more for serving
- 8 6-in. flour tortillas, warmed
- Sour cream, for serving
Directions
Step 1
In large bowl, toss peppers, onion, lime zest and juice, cumin, 1 tablespoon oil, ¼ teaspoon garlic, ½ teaspoon salt and ¼ teaspoon pepper. Air-fry at 400°F, shaking occasionally, 10 min.
Step 2
Meanwhile, rub steak with remaining 2 tsp oil, then season with ancho chile powder, remaining ¼ teaspoon garlic and ½ teaspoon each salt and pepper. Push vegetables to 1 side of air fryer and add steak to other side. Air-fry, flipping once, to desired doneness, 10 minutes for medium-rare.
Step 3
Transfer steak to cutting board and let rest at least 5 minutes before slicing. Toss vegetables with cilantro. Fill tortillas with steak and peppers, then top with sour cream, sprinkle with cilantro and serve with lime wedges if desired.
